Recipes for leftover BBQ
Chipotle Brisket Salad
- 1/4 cup fresh lime juice
- 1/4 cup fresh cilantro, chopped
- 2 tbsp chipotle in adobo, chopped
- 2 large garlic cloves
- 1 cup extra virgin olive oil
- lettuce - mesculin mix (arugula, mustard greens, etc.)
- grape tomatoes, halved
- 1 avocado, sliced
- leftover smoked brisket, sliced
- extra sharp cheddar cheese, shredded
- Combine first 4 ingredients in a bowl.
- Slowly stream in olive oil while whisking. Set aside.
- Make salad with lettuce and tomatoes. Layer sliced
avocado and brisket on lettuce and top with grated cheddar.
- Top with chipotle dressing
