Recipes for leftover BBQ


Chipotle Brisket Salad
1/4 cup fresh lime juice
1/4 cup fresh cilantro, chopped
2 tbsp chipotle in adobo, chopped
2 large garlic cloves
1 cup extra virgin olive oil
lettuce - mesculin mix (arugula, mustard greens, etc.)
grape tomatoes, halved
1 avocado, sliced
leftover smoked brisket, sliced
extra sharp cheddar cheese, shredded
  1. Combine first 4 ingredients in a bowl.
  2. Slowly stream in olive oil while whisking. Set aside.
  3. Make salad with lettuce and tomatoes. Layer sliced avocado and brisket on lettuce and top with grated cheddar.
  4. Top with chipotle dressing
